You set the dial to 350. The cake comes out raw in the middle and burned on the bottom. Or the roast takes twice as long as the recipe says. The oven still heats, so nothing looks broken. But the number on the display and the real heat inside the box have parted ways. Here is what usually causes that, and what you can check yourself.

What "running hot or cold" actually means
An oven does not hold one steady temperature. It swings above and below the set point as the element or burner cycles on and off. A healthy oven keeps that swing tight, maybe 20 or 25 degrees either side. When the swing gets wide, or the whole average drifts off, your food tells on it before the display does. Cookies brown on one side. Bread stays pale. Casseroles need extra time every single night. That pattern means the oven's sense of temperature and the real heat inside no longer match. The cause is usually a sensor, a calibration setting, or heat leaking out.
Start with calibration and how you use the oven
Most ovens made in the last twenty years let you shift the calibration a set number of degrees. It is buried in the control settings. A power blip or somebody's curious kid can nudge it. That is the cheapest fix on the list, and it costs nothing but reading the manual. Habits matter too. Opening the door to peek dumps a lot of heat, and in a humid Ohio Valley kitchen the oven works harder to get it back. Racks in the wrong slot put food too close to the bottom element. Dark metal pans brown faster than glass. Rule those out first.
The temperature sensor and thermostat
Inside the oven cavity you will see a thin metal rod, usually near the upper back wall. That is the sensor. It reports the cavity temperature to the control board. As it ages, its readings drift, and the oven happily heats to the wrong number because that is what it was told. Older ovens use a capillary bulb thermostat instead, same idea, different part. A drifting sensor is the single most common reason a well-behaved oven starts running 40 or 50 degrees off. It is also a straightforward part to test with a meter, which is where a technician comes in.
Door seals, hinges, and heat that leaks out
Put your hand near the closed oven door while it is hot. Feel a stream of warm air escaping along an edge? That gasket is done. The rope-like seal around the door opening flattens, tears, or falls out of its clips over the years. Older houses around here often have ovens that have been through several families. Sagging hinges are another cause. If the door does not sit square, or you can rock it, the seal cannot do its job. Heat leaks, the oven never reaches set point, and the element runs almost constantly. Look at the gasket for gaps and hard, crumbly spots.
Safe checks you can do, and what we do differently
Safe: read the calibration setting, look at the gasket, check that the door closes square, move racks to the middle, and hang an oven thermometer in the center to see the real number. Give the oven a full 20 minutes to settle before you read it. Leave the back panel alone, and leave gas connections alone. On our end we meter the sensor's resistance at temperature and compare it to spec, log the actual cycling pattern, check element or igniter behavior, and test the control board's output. That tells us whether the sensor lies or the board mishears it. Call us and describe what your food is doing.

How far off is too far off?
More than about 25 degrees from your set point, measured with an oven thermometer at the center after a full preheat, is worth looking into. Small drifts you can bake around. Fifty degrees will ruin baked goods every time.
Can I just set the dial higher and live with it?
For roasting, often yes. For baking and candy work, no. A drifting sensor usually keeps drifting, so today's 30 degrees becomes next month's 60. Better to find out which part is wrong.
Why does only one rack position cook right?
Uneven heat points at airflow or a failing element rather than calibration. A blocked convection fan, a bad bake element, or heat escaping through a torn door seal all produce hot and cold zones inside the cavity.
